About this class
Whether you've never boiled water or you're already comfortable in the kitchen but want to level up, this live cooking course is designed to meet you where you are and take you further than you imagined. Each session is a hands-on, instructor-led experience where you'll cook alongside your classmates in real time, ask questions as you go, and walk away with a finished dish and a new set of skills. The course is structured to build your knowledge progressively — early sessions establish core techniques like knife skills, heat control, and flavor balancing, while later sessions tackle more complex dishes and multi-component meals. You'll explore a range of cooking styles, ingredient categories, and preparation methods that give you the versatility to cook confidently across different cuisines and occasions. Every session is designed around completing a real dish — not just watching a demonstration. You'll gather your ingredients before each class, follow along live with your instructor, troubleshoot challenges in real time, and taste and evaluate your own results. By the end of the course, you'll have cooked 12 complete meals and built a personal toolkit of techniques you can apply every day. This is more than a cooking class — it's a full culinary education delivered in an accessible, encouraging, and interactive format. You'll finish the course with the skills, confidence, and inspiration to cook delicious meals from scratch, night after night.
What we'll do

- Troubleshooting live demos where the instructor intentionally makes a common mistake and walks through the fix
- Plating reveal moments where learners hold finished dishes up to camera for group feedback and celebration
- Meal timeline planning exercises on a whiteboard or shared screen before cooking begins
Practical Project
12-Week Culinary Portfolio: From Foundations to Feast
Over the course of the 12-session program, learners will build a personal culinary portfolio by completing a series of progressively challenging dishes. Each session contributes a finished dish or mastered technique to the portfolio, culminating in a final multi-course meal planned, prepared, and presented live in the last session. This project demonstrates growth from basic knife skills to confident, creative cooking.
Expected result: By the end of Session 12, each learner will have: (a) a personal record of 10–12 dishes they cooked live during the course, (b) demonstrated mastery of at least 6 core cooking techniques, and (c) successfully planned and presented a self-directed final meal incorporating multiple techniques from the curriculum.
What you'll need
- Basic chef's knife and paring knife
- Cutting board (wood or plastic, at least 12x18 inches)
- Medium and large sauté pans or skillets (non-stick and stainless recommended)
- Medium saucepan and a large pot
- Baking sheet / sheet pan
- Mixing bowls (small, medium, large)
- Measuring cups and measuring spoons
- Instant-read meat thermometer
- Wooden spoon, silicone spatula, whisk, tongs
- Colander or strainer
- Peeler, grater/microplane
- Paper towels and clean kitchen towels
- Basic pantry staples: olive oil, neutral oil, kosher salt, black pepper, garlic, onions, canned tomatoes, stock/broth, dried herbs
- Session-specific ingredients provided in advance via a weekly ingredient list shared before each class
- Cooking journal or notebook (or phone for photo log)
- Reliable internet connection and a device with camera for live participation
- Optional: apron, kitchen scale
Prerequisites
No prior experience required. Learners should have access to a basic home kitchen with a stovetop or oven, standard cooking equipment (pots, pans, knives, cutting board), and the ability to purchase ingredients before each session.
